Three person tents are ideal for 3 people without bags, or two people with plenty of room for bags. Some of them may even have porch space so that 3 people can fit with their bags.
Think about the construction if the tent is likely to be used in anything harsher than a good summer night. The larger the Hydrostatic Head (HH or mmHH) the more water resistant and longer lasting it should be. Dome tents and geodesic tents will be much more resistant to wind than tunnel shaped or ridge tents.
